My goodness I published lots of recipes this year and had tons of fun in the kitchen!! As I look forward to the new year and all the new adventures, I can’t help but review where I’ve been. Thank you to each and every one of you for your kind words, feedback, questions and never-ending support!! I certainly wouldn’t be here without you!
And now…. without further ado….here are your top 10 favorite recipes of 2017:
#10 – mushroom, fennel and potato chowder
Bacon, cream, potatoes, herbs, and roasted mushrooms – oh my!!
#9 – asparagus and ricotta tart
Store bought puff pastry is baked until golden brown, then filled with a creamy ricotta and parmesan cheese mixture, topped with crispy green asparagus and baked until bubbly – the flakey tart shell and cheesy filling pairs perfectly with the cooked asparagus – delicious perfection just waiting for you to dive in!
#8 – lemon ricotta and raspberry crepes
Creamy ricotta cheese filled lemon crepes topped with whipped cream and fresh raspberries – the perfect way to wake up!!
#7 – four bean and pumpkin chili
Four bean and pumpkin chili with all the yummy toppings you could possibly pile on top!! This chili can be made with only one bean, or make it with all four, or whatever type you have on hand. The pumpkin is completely optional – it lends a creamy richness to the dish without the use of any fat so that in itself makes it a delicious addition – but the chili would be just as delicious without it too.
#6 – green summer rolls with spicy tahini sauce
Ripe avocado, crunchy cucumbers, fresh tofu, broccoli sprouts, garden lettuce and some cilantro sprigs all rolled up in a rice paper wrapper. A California roll if you will?? A crunchy roll? How about a green summer roll filled with all the healthy things – and served with a side of spicy tahini sauce. Lunch is served!!
#5 – curried cauliflower and chickpea stew
The fastest, easiest and most delicious dinner – cauliflower, chickpeas, and russet potatoes, tossed with some tasty spices and roasted in the oven. When everything is nice and golden brown, you place the veggies into a blender with some vegetable stock and puree them to smooth status. And thennnnnn, you ladle the soup into bowls, top it with some reserved roasted veggies and call your family to dinner. Easy, breezy, and in under 30 minutes you can set a healthy, delicious (and happens to be vegan if anyone noticed) meal on the table with almost no effort.
Vinegar and sea salt potato chips, crinkle cut chips with black pepper and sea salt, and waffle cut with homemade bbq spice and sea salt – I dare you to try and eat just one!!
#3 – swiss chard and cheddar tart with oatmeal pastryÂ
Roll out the pastry dough, cook a bunch of swiss chard, and mix everything with cheese, yogurt, and some eggs, and bake it all together until it is warm and bubbly and the tart shell is all kinds of crispy and brown. Then cut a big slice and enjoy!!

Nourishing and vitamin-packed deliciousness all in a single bowl – red lentil soup with beet greens, ginger, turmeric and lemon.

#1 – chili lime corn on the cob with feta cheese
Grilled corn on the cob, mexican style – crumbly feta cheese and greek yogurt are mixed with some tangy lime juice and spicy chile powder and smeared all over piping hot and charred corn on the cob!! Drool….
