Today we harvested our first backyard garden crop – French radishes!!! Let me tell you, I was very happy to see these little guys push their way through the warm soil, but my little man was over the moon excited.
Every morning – first thing, – I would get, “mommy, water plants outside?” And we would head outside to water the buried seeds and talk about how plants grow and how they need the sun and a big drink of water everyday.
And then one day, there were a few sprouts that received a standing ovation by the little man and so much excitement that I couldn’t imagine a better time to be had in our backyard.
And then it was time to harvest.
We chose our favorite basket and donned our gardening hats and headed out to harvest the first food we’ve grown as a family. And boy, was the little man taking his “head harvester” job seriously!
He squatted down next to me and watched in complete silence as I pointed out the red tops of the radishes and showed him where to gently place his thumb and finger and pull the warm vegetable out of the ground.
“Like this mama?” he asked me so quietly that I could barely hear him.
“That’s perfect, little man, pull right there” I guided him.
And out came the first radish followed by a screaming three year old, “mama! mama! I did it! I did it!” And that was followed by a small victory dance around the garden patch.
And then there was more radish pulling followed by more excitement.
Then we carried them proudly into the house and slowly washed the warm soil off the vegetables and immediately set to work making this fabulous and tasty fat free dipping sauce to go with our basket of French radishes
miso tofu ranch dip
from bon appetite
makes 2 cups
4 oz drained soft tofu
3 tablespoons white miso
1 tablespoon lemon juice
2 teaspoons sherry vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/2 cup fat free greek yogurt
2 tablespoons chopped chives
1 tablespoon chopped parsley
In a blender or food processor, mix the tofu, miso, lemon juice, vinegar, garlic powder, onion powder and black pepper until fully combined – scraping down the sides, if needed.
Transfer the mixture to a medium sized bowl and mix in the yogurt, chives and parsley
Top the dip with more chives and serve with raw vegetables for dipping.
