Have you been enjoying your summer??? Us too! I mean, we’ve been trying to pack so many fun things into every single day that I really hadn’t even noticed what day it was, much less what month we had made it to!! Until today. This morning we walked right into Target and guess what we saw right away….SCHOOL SUPPLIES!!??!? Right there, in the middle of the walkway!!
I mean, come on!! It’s summer break!! Why in the world are we thinking about school supplies when…..*looks at the calendar and realizes there are only three more weeks until school starts*…..oh, that’s why we are bombarded with three ring binders, colored pencils and oh, those pens in every ink color look fabulous….*puts pens in cart but still offended by the school supply rack messing with my summer plans*…
So, in an effort to squeeze in as much summer in our summer break as we possibly can….here are our top seven most fabulous popsicle recipes to help you enjoy these last days before you have to pack lunches, rise way too early in the morning, and BUY all of those colored pencils and three ring binders on the long list of school supplies!!

Freshly Squeezed Limeade Popsicles
Tangy and delicious, these limeade popsicles really hit the spot on a hot day! Fresh lime juice gets mixed with some water and a bit of honey to sweeten, and into the freezer they go!! Once they are frozen, it’s time to enjoy!
Raspberry, Mango and Coconut Popsicles
You can use any kind of fruit in this popsicle recipe that you would like!  My kids are really enjoying raspberries and mango this week so that’s what I made – but blueberries, kiwi, strawberries and even a mixture of all three would be great in these pops!!
These vegan fudgesicles are made by whisking creamy coconut milk and fresh almond milk together with some maple syrup and cocoa powder, and then the mixture is poured into some popsicle molds and placed into the freezer until frozen. Easy breezy popsicle freeze-y!!!
One of these orange creamsicles will make any day better – creamy coconut milk mixed with freshly squeezed orange juice and with just a hint of sweet honey!! Creamy, citrus-y and oh so delicious-y!!
All the best flavors of summer on one popsicle stick – these strawberry lemonade popsicles!!
These summer berry popsicles are just coconut milk and berries. You can add a touch of honey if you don’t like a big bite of frozen coconut milk (noted in recipe) or you can do what I did and let the sweet summer berries speak for themselves. Freeze it in layers, mix everything together, use just your favorite berry instead of the four – it’s your summer, make whatever works for you!
Rainbow Fruit Sorbet Popsicles
Take your three favorite fruits, puree, and pour alternating layers into a popsicle mold – it’s just that easy! For these popsicles, we used pineapple, cantaloupe and honey dew melon – but any fruit that you like would be amazing too!!
