Yummy breakfast nom-noms front and center this morning!!
I’ve been working non-stop on little kid Halloween costumes over here and that has me staying up late so that I can cut and sew and create while the adorable monsters are sleeping soundly in their beds. Less kid interruptions should probably equate to a faster delivery time for the costume orders but instead my mind is so exhausted from the day that I think I might be doing things even more slowly than previously planned.
So the mornings have been a little fuzzy this week while I tend to crawl out of bed instead of bounce. I’m still smiling when we get up, still tickling during the first of many wardrobe changes, and still making breakfast first thing…but just more slowly, if you will. And a little more disorganized as it turns out.
Believe it or not, these pumpkin oats were a happy accident. I had prepared oatmeal for the kids breakfast this morning and reached in the fridge for the applesauce (I know, weird combo, but if that’s what it takes to get them to eat healthy…) – plopped a bog scoop into each bowl on top of the oatmeal and put it on the table.
“Breakfast is served,” I mumbled while looking around for my ever-elusive cup of caffeine. I finally found it, took the longest drink ever, sat down at the kitchen table with the kids, and looked up to see a very surprised Avery.
“What?” I asked, “What is it?”
He just looked at his bowl and then looked at me and said, “What is that!??!” and pointed to his bowl of oatmeal.
Confused, I looked into his bowl thinking I would see an uncooked oat or three in a pile but instead I saw a big scoop of pumpkin puree. Turns out I added pumpkin puree instead of applesauce as one does when there’s not enough sleep going around because of the Halloween costume time crunch.
“Huh,” I mumbled and then smiled really big so I could try to sell this big mistake in lieu of making another breakfast from scratch…
And using my most shiny and excited voice that I could drum up at o-dark-thirty I said, “Mommy made you pumpkin pie oatmeal for breakfast, doesn’t that sound delicious??”
I won’t lie, it was a tough sell. But after comparing breakfast to pie, pie flavored candy, and perhaps negotiating some maple syrup and cinnamon for a few trying bites – well, it turned out the oatmeal combo was really good, it was gobbled up by both kids, and I may have had a few bites along the way too because YUM.
Turns out you can have pie for breakfast. Pumpkin pie….oatmeal. But please don’t tell my kids the difference just yet.
pumpkin oats with toasted pecans and pomegrante
makes one serving
1/2 cup old fashioned oats
1/2 cup almond milk or water
1/2 teaspoon cinnamon
1/4 cup pumpkin puree
3 tablespoons coconut yogurt
2 tablespoons chopped toasted pecans
2 tablespoons pomegranate seeds
2 tablespoons maple syrup
Combine the oats and water in a microwave proof bowl and cook on high for two minutes. Carefully remove the bowl and stir in the cinnamon and pumpkin puree. Top with coconut yogurt, toasted pecans, pomegranate seeds and maple syrup.
